Banana Applesauce Blender Muffins(V, GF, DF) – I mix these up by substituting pumpkin for the applesauce and using pumpkin pie spice instead of cinnamon!
Sweet Potato Breakfast Bar (V, GF, DF) – Roasted sweet potatoes with topping options sweet (cinnamon, mixed nuts of choice, maple syrup, blueberries, banana, hemp seeds, etc. ) or salty (egg, avocado, bacon bits, spinach)
Protein Bars or Lara Bites (both no bake and good for on the go!) – (V, GF, DF), substitute sunflower butter for nut free, make sure to browse the variations at the bottom!
“Egg” in a hole – Using GF/Vegan Bread (my three favorites are at Whole Foods, Harris Teeter, Costco) and egg or liquid egg replacement with salt and pepper and vegan butter
Fruit Sushi – GF Cassava tortilla wrap with nut butter, sunflower butter, or dairy free hazelnut spread, with banana, raspberries and strawberries, rolled and cut. (optional Maple Syrup “soy sauce” dip)
Power Smoothie and Cereal – GF Cassava O’s or Three Wishes GF cereal (both high protein and low sugar) paired with a smoothie for fiber!
